Calvi dell'Umbria (TR) - Calvi dell’Umbria (Tr). From July 7th to 10th the village of Santa Maria della Neve will be holding its Sagra del Castrato festival devoted to an unusual culinary speciality - the meat of young rams that are castrated between six months and two years of age. Largely consumed in northern Italy, this strong-tasting delicacy is generally cooked in stews.
