Gualdo Cattaneo (PG) - Gualdo Cattaneo, loc. San Terenziano (Pg). From May 7th to 9th San Terenziano will be organising its first edition of the Porchettiamo gastronomic festival devoted to the many varieties of porchetta in Italy. Tastings, meetings, discussions and a host of collateral events have been scheduled, with a view to providing visitors both with entertainment and a way to learn more about this uniquely Italian way of roasting pork. Although there will be porchetta varieties from all over the country, there will be a prevalence of porchettas from central regions such as the Abbruzzi, Lazio, Tuscany, the Marche and Umbria. The round table discussion entitled “La porchetta, dalle origini al panino” aims to shed light on the historical and anthropological value of this particular dish and on the various techniques used for killing and treating pork.
